Tomato Soup

In our daily food kitchen, we have shared soup recipes like - broccoli soup, Carrot Soup and Manchow soup. Today, we are going to share the recipe for tomato soup, a classic comfort food that is easy to make and perfect for any time of the year. Here's a simple recipe for tomato soup garnished with cream and croutons, along with some tips and tricks to make it even more delicious.

Ingredients:

  • ½ kg tomatoes, cut into small pieces
  • 2 tbsp melted butter
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 inch piece of ginger, grated
  • Fresh coriander stems
  • 1 tbsp sugar
  • Salt and pepper to taste
  • 1 black cardamom
  • 1/4 cup heavy cream
  • Homemade croutons

Directions:

Making Tomato Puree

  • First of all, we will heat a nonstick pan with butter over medium flame then add the onion and garlic and cook for about 5-7 minutes until the onion becomes soft and translucent.
  • Add the tomato pieces and their juices, along with the coriander stems.
  • Add sugar, salt, black pepper, and cardamom. Now, allow the mixture to boil over a medium flame. Then, reduce the heat from medium to low and let it simmer for 10 minutes.

Making Smooth Tomato Paste

  • By using a mixer grinder or an immersion blender, make a smooth tomato puree.

Sieving Process

  • Strain the tomato puree with the help of a strainer.

Additional Cooking

  • Heat the strained puree for the next 5 minutes over low heat.

Garnishing

  • Then, finally transfer the pureed soup into a pot and stir in the heavy cream for getting a creamy texture.

Serving

  • Before serving the soup into a bowls, garnished with croutons and an extra drizzle of cream.

Tips and tricks:

  1. For a smoother texture, you can strain the soup through a fine mesh strainer after blending.
  2. If you don't have an immersion blender, be careful when transferring the hot soup to a blender. To avoid overfilling the blender, you may need to do it in batches
  3. For a thicker soup, you can add a can of tomato paste or a few tablespoons of cornstarch to the mixture before blending.
  4. If you prefer a spicier soup, you may spread a pinch of cayenne pepper or a diced jalapeno pepper to the pot while the soup simmers.
  5. For a vegan version, use vegetable broth and omit the heavy cream or use low fat cream or a dairy-free alternative like coconut cream.
